Proxmox expanding support removes one objection from management. The remaining concern is everything around the hypervisor: backup, monitoring, hardware certification and finding people who can support Ceph at 3 a.m. Has that ecosystem caught up enough for a medium enterprise?
It depends on how much of the stack you build yourself. Proxmox plus external SAN and a supported backup product is a simpler first step than learning Proxmox, Ceph and a new network design at the same time
Hiring is improving, but still not VMware level in our market. We trained two Linux admins and bought support. The platform has been fine. The risk was knowledge concentrated in one enthusiastic engineer, so we wrote runbooks and made others do the restores.

That's a sensible pilot. Test live migration, host failure, backup restore, patching and support response. Don't judge only from a successful install. The question is whether the team can operate it on a bad day with the expert on vacation
